Freezing & Thawing Blocks of Cheese

Have you ever heard of the technique for freezing cheese and then thawing it so that it doesn't crumble (apparently if you freeze blocks of cheese and then thaw it in the fridge it will crumble when you try to slice it.)


If you haven't heard the technique, then here it is:

Leave the block in the original wrapping/packaging/plastic. Then wrap the block in foil. Place the block in another plastic bag. Place it in freezer.

When you want to use it, you have to plan 36 hours ahead before you will need it.
So remove the block from the freezer and place it on the counter for 24 hours (the cheese must thaw at room temperature for for 24 hours - that's why you put it on the counter). 24 hours later, place the block in the fridge for 12 hours. Then it will slice without crumbling.

ooh, that's a good tip!! I need that, i usually just freeze grated cheese since I know it just crumbles anyway
